ABOUT 613 COFFEE
Coffee with a local address and a personality problem.
613 Coffee is built around the idea that Ottawa is not one thing. It is downtown chaos, west-end ambition, suburban survival, riverside calm, early mornings, late nights, and at least one person trying to merge badly on Hunt Club.
Neighbourhood coffee, without the beige nonsense.
Instead of making another generic “premium coffee brand” with a leaf icon and a sentence about passion, we built a coffee series around the actual neighbourhoods people live in, argue about, drive across, and secretly love.
Each coffee in the 613 Coffee Neighbourhood Series is inspired by a different part of Ottawa. The roast, label, colour palette, tasting notes, and tiny local easter eggs are all built to feel like that neighbourhood.
It is part coffee, part collectible, part civic personality test. Ridiculous? A little. Delicious? That was the plan.
Roasted properly. Not just designed nicely.
Behind the labels is a real roasting operation with nearly a decade of experience in specialty coffee. 613 Coffee comes from the same roasting brain trust behind Brown Bag Coffee Roasters, a local roastery that has spent years sourcing, roasting, refining, and occasionally over-caffeinating the National Capital Region.
We roast on a Sivetz SRM-15 fluid-bed roaster, which uses hot air to lift and roast the coffee evenly. That gives us clean heat transfer, precise control, and a bright, expressive cup without the heavy drum-roast haze.
Cleaner roasting matters.
Roasting coffee smells amazing until it doesn’t. Smoke, chaff, and exhaust are part of the process, and ignoring that is how you become “that building” in the neighbourhood.
To keep things cleaner, we use a VortX Eco-Filter smoke suppression system as part of our roasting setup. It helps reduce smoke and particulates from the roasting process, letting us focus on building better coffee without turning the surrounding air into a campfire cosplay event.
Built for Ottawa, roasted in the National Capital Region.
613 Coffee is proudly local, but not in the vague “we once saw Parliament from a moving car” kind of way. This project is rooted in Ottawa’s neighbourhoods, habits, shortcuts, landmarks, histories, and small daily rituals.
The goal is simple: make coffee that feels connected to where people actually are.
- Not generic.
- Not beige.
- Not another bag with a mountain on it because apparently all coffee must come with legally mandated outdoor scenery.
Just great coffee, roasted with care, wrapped in Ottawa’s weird little soul.
